docs: drop defunct pocket and runkeeper backend docs - #484

Matches the backend removals in python-social-auth/social-core#1923. Pocket was shut down by Mozilla in July 2025 and RunKeeper's Health Graph API was discontinued by ASICS, so neither OAuth flow works anymore. echosign and exacttarget, also removed there, had no docs pages.

Matching docs edits for python-social-auth/social-core#1923, which drops the pocket, runkeeper, echosign, and exacttarget backends.
Only pocket and runkeeper had pages here, so this deletes those two files and their
toctreeentries indocs/backends/index.rst. echosign and exacttarget were never documented. Pocket was shut down entirely by Mozilla in July 2025 and RunKeeper's Health Graph API was discontinued by ASICS, so the flows those pages describe can't be completed anymore.Nothing else in the tree links to either page —
sphinx-build -nis clean apart from the autodoc warnings that were already there on master, andprek run --all-filespasses.
